Sophie's Banana Bread
3pm slump? I find that as I reach mid afternoon, my body needs some sustainable fuel. It's hard if you are at work or somewhere where finding a healthy option is out of the question. This healthy (yet delicious) banana bread recipe is great for complex carbohydrates (slow release energy) and natural sweetness to help with any sugar cravings! There is also the option to replace the dates with 70% dark chocolate (the low sugar kind) if you are feeling cheeky! From Sophie
INGREDIENTS:
2 eggs 1/2 cup melted coconut oil or olive oil Tablespoon of honey 1/4 Greek yogurt (or coconut yogurt) 1 teaspoon vanilla extract 1 cup mashed ripe bananas about 2-3 medium bananas 1 3/4 cups wholegrain flour, rice flour, coconut flour or ground oats (you can grind oats in a food processor) 1 teaspoon ground cinnamon + 1 teaspoon of allspice + 1 teaspoon of ground ginger 1/2 cup of chopped dates & nuts or dark chocolate 1 teaspoon baking soda ½ teaspoon salt
INSTRUCTIONS:
Pre-heat oven to 180. Grease a loaf pan and set aside. In a medium bowl, whisk the flour, spices, baking soda and salt. Set aside. In a large bowl, beat eggs, oil, honey, yogurt and vanilla for 2 minutes. Stir in the bananas, flour mixture and dates. Pour batter into greased pan, sprinkle with some more cinnamon, raw sugar, or banana slices (optional)
Bake for 50-55 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes, slice and enjoy!
